  • 2 slices sourdough bread or sprouted wheat bread
  • 1 small avocado
  • 1 –2 cups water
  • 2 large eggs
  • 6 cherry tomatoes
  • 1 tbsp white vinegar
  • 1 pinch salt
  • 1 pinch cracked black pepper
  • 1 tsp fresh chives chopped

Instructions
 

  • Prepare the Bread Base: Begin by selecting two slices of thick sourdough or sprouted wheat bread.
    Place them into a toaster or toaster oven and toast until they turn golden brown and crispy on the edges.
    A well-toasted base prevents the bread from becoming soggy once you add the creamy avocado and juicy tomatoes, ensuring every bite has a satisfying crunch.
  • Cut and Mash the Avocado: Slice the avocado in half lengthwise and carefully remove the pit.
    Scoop out the flesh with a spoon and transfer it into a medium-sized bowl.
    Using a fork, mash the avocado until smooth but still slightly chunky for texture.
    Sprinkle in a pinch of salt and a dash of cracked black pepper to enhance the natural buttery flavor. Stir well and set aside until the bread is ready.
  • Heat and Prepare Poaching Water: Fill a medium-sized pot with 1 to 2 cups of water and place it on the stove.
    Bring the water to a gentle boil over medium-high heat. Once boiling, reduce the heat so the water is just simmering—bubbling too vigorously can break apart the egg.
    Add one tablespoon of white vinegar to help the egg whites firm up quickly and hold their shape while poaching.
  • Create a Whirlpool for the Egg: Crack one egg into a small cup or ramekin to make transferring easier.
    Using a spoon, stir the simmering water in a circular motion to create a gentle whirlpool.
    This swirling action pulls the egg white around the yolk, forming a beautifully compact poached egg.
    Slowly slide the egg into the center of the whirlpool and let it settle.
  • Poach the Egg to Perfection: Allow the egg to cook gently for 3–4 minutes. Keep the water at a low simmer—avoid a rolling boil, as it can scatter the egg.
    The whites should become firm while the yolk stays soft and runny inside.
    Once cooked, lift the egg carefully from the water using a slotted spoon and transfer it onto a paper towel to absorb excess water.
    Repeat the process with the second egg.
  • Spread the Avocado Mixture: Once your bread is toasted and slightly cooled, divide the mashed avocado evenly between the two slices.
    Use the back of a spoon or a butter knife to spread it all the way to the edges.
    A generous layer ensures each bite is creamy and flavorful while also acting as a cushion for the toppings.
  • Slice and Add Fresh Tomatoes: Wash and dry the cherry tomatoes before slicing them in half.
    Arrange them neatly on top of the avocado spread, distributing them evenly across both slices.

  • Top with Poached Eggs: Carefully place one poached egg on top of each slice of avocado toast.
    Position it in the center so the yolk is ready to break open when cut.
